That is the hour, on this side of Moraira, when the light comes off the Mediterranean at an angle and the whole valley turns the colour of dry sherry. Paichi sits high enough to catch it and open enough to keep it — the Peñón de Ifach anchoring the southern horizon at Calpe, the Sierra de Bernia standing behind to the west, and between them nothing but pine, terrace and open country.
